Handy for anything that doesn't currently have eSIM capability and also if you are travelling a lot even with an eSIM capable device this could be much simpler if needing to swap networks frequently.

I think I must be a bit slow in this esim business. Apart from not having a specific sim card in your phone, what are the advantages? More private? Can I have foreign PAYG plans added?

Some providers only do eSIM's.
For example, assuming that you really value your privacy, you might use these people.

As you say, it's easy to get a short plan when visiting somewhere.
Planning a trip to Norway for example.

You could buy it before you get on the plane and have a working phone when you get off.
If you do a lot of travel you might need multiple eSIM's.
While I have no call for either of these uses, some people do.
